Small Batch Paleo Vegan Nut Butter Cookies
Let's cut to the chase!
Preheat oven to 350°.
In a bowl, mix:
1 cup nut butter (I love Costco's mixed nut butter, which works great in vegan recipes because it has flax and chia)
1 cup coconut sugar (sub maple sugar for coconut allergy)
1/4 coconut flour (sub almond flour or tigernut flour if you can't have coconut)
1 tsp baking soda
1/4 tsp Himalayan salt
3 Tbs coconut milk (or almond milk)
1 Tbs collagen powder (omit if vegan)
Line a baking sheet with parchment or a silicone sheet. Drop tablespoonfuls of dough onto the sheet. Leave plenty of room for the cookies to spread. Bake about 10 minutes until the edges are lightly browned. Remove from oven, but allow the cookies to cool on the sheet at least 5 minutes. The cookies firm up as they cool. The recipe makes 15 cookies. Enjoy!
